The best extended version to watch is the "Special Edition," which is the only extended edition approved by director James Cameron. Sadly this version is not that.

There are total of six. Three I enjoyed. It wasn't as powerful as the third
BUT still enjoyable. The fourth is interesting. I found it weak but again I did enjoy it. Five was a mind fuck. I have not seen six but the mom returns.

Yeah so the version you watched has an alternate ending that for many fans is seen as the "Good" ending of these movies. Perfectly understandable why you both would be confused with how they're more Terminator movies if Judgement day never came to be.
in the theatrical and directors cut Sarah Connor ended the film with this quote. "The unknown future rolls toward us. I face it for the first time with a sense of hope, because if a machine, a Terminator, can learn the value of human life, maybe we can too. "
Pretty much stating that she's unsure what the future holds, did the events of Terminator 2 delay Judgement Day (which should happen 2 years later in 1997) or did they stop Skynet completely. That's the question the movie leaves you on.

So yeah alot of timelines created by Skynet and the resistance when trying to kill and protect certain people. It's a mess and I guess that makes sense sending people across into the past would naturally create alot of alternate timelines and Skynet themselves would try all kinds of new things to try and stop the rise of important freedom fighters regardless of how many timelines they create.
The Genisy timeline is a cool concept but the film is pretty mixed. I'll not go into spoilers just in case you do watch it but the events of this film pretty much change everything you see in both terminator movies creating a whole new timeline.
The Dark Fate timeline though picks up right after Terminator 2 and pretty much retcons everything post Terminator 2 creating a new future. It's an alright film I know there's people who really like it while others are mixed.

You guys should watch the the rest of the franchise, itβs actually pretty good , itβs not boring at all and good story telling, especially terminator 3 and 4

Congrats on watching T2 Judgment Day. Now donβt watch any other Terminator film. The reason why you are confused as to how there could be more films is because you both just watched a special edition of the film that has never before scenes & an alternate ending. While I like the ambiguity of the other ending, I prefer this version of the film as a whole. For instance. Iβve seen this film over a hundred times at least & this is the first time I noticed that the thing Dyson was holding over the detonator was a broken piece of the processor he was working on. A symbolic gesture on the films part of saying that in order for Skynet to truly be lost to the future, Dyson must die too. Itβs very Frankenstein in that way.

It is true that you needn't waste your time with the later ones. It is plain they were made just to suck more money from the franchise because they completely ignore this film.

You guys have to do Titanic (1997) β€ it's very heartwarming and chaotic but the movie tells the story of the Titanic! Worth a watch!
