The idea is simple, you pair these characters with Skyrim's wonderful fauna and imagine a unique scene for them. You can also name characters who are not in the list but are in the vanilla game.

Alternatively Shuftharz (the female orc smith in Mor Khazgur in the reach) asks the dragonborn to deliver her sword to her daughter. But they refuse and leave as the dragonborn does. She decides to deliver it herself but is accosted at night by a towering werebear. Or possibly by an influx tribe of rieklings :V (for some reason i find the idea of an orc milf getting gangbanged by goblin dudes hot)

She arrives a little late, having encountered some oddly behaving snowy/soltsheim based creatues (due to the stones being corrupted by miraak). Specifically a fairly intelligent ice troll being worshipped by a small group of rieklings. Who believe it is a demigod.
