Short hair and higher-definition Hiro +bones animation.

I could also remake all the character sprites to use bone animation and higher definition.

this helps save a lot of time, is easier to implement & animate, and looks smoother but, using this will cause a loss of pixel art aesthetic

what do you guys think about it?

Current macaroni limbs look goofy, but stand out a bit too much overall, so I personally prefer the bones. I wouldn't worry too much about tying pixel art to 2D as there are already some games that use pixel art in 2.5/3D with VFX and look decent or even good, so as long as there's a proper execution I'm for it. Last thing, I think medium-length hair (in-between this and before) would suit Hiro the best.
