I think you caught on to it, but the issue with Ed's automail is that in the extreme cold (I would guess that it is around 10-30 below 0*F) having a giant slab of metal attached to you skin is not a good thing. Add to that that hydraulics don't work properly in temperatures outside the range they were designed for, and metals get more brittle as they get colder, there are any number of things that could be going wrong with something as sophisticated as his arm. I really cannot begin to explain how cold Ed would be with the metal arm and leg attached to his body.
