I've never seen any other theories about this, but to me it's always seemed obvious that the ice cream maker sent for Lorelai and Max was her wedding present from Emily. In S2Ep4, Emily responds to Lorelai calling off the wedding by saying "I was just thinking I had to return your present." and then says "So who wants ice cream?"
