I think you should do Buffy and Angel side by side. There are cross-over episodes, and I feel like you'd potentially miss out on a bunch of good stuff. I prefer the Buffy series to the Angel series, BUT cant deny that Angel's show has some outstanding episodes and story arcs throughout - some of which will tie back into the Buffy show as you go along. My personal fav viewing order is the SlayAlive Guide. It bunches multiple episodes together so you arent forced to crossover in the middle of a juicy mini-arc, which helps with the flow. Also staggers the episodes nicely between the two shows so that each show's timeline is pretty much on point by the time a crossover comes along.
