I saw this movie in theaters at the time, as a friend wanted to go. It was solid enough. Haven’t seen the sequels.

There's 2 methods of watching the MCU movies (and TV shows if you'd like). You can watch them either in chronological order or you can watch them in the order they were released. There are many websites out there with the watch order lists.
Other than that, you mention about Agent Coulson. He appears in many of the movies but also is in the TV show specifically about S.H.I.E.L.D. - Marvel's Agents of S.H.I.E.L.D.

One thing I dislike about reactions like mcu or Star Wars is that people want them to do it in a certain order like do it in timeline order or release order if you want to get the better experience and get the end credits scenes more I would prefer doing it in release order but if you want to get a different experience then do it in timeline order just don’t force people into watching what you would prefer let them do what they would prefer

Havits: This is the only LEGAL way to do it. Channels are always getting into legal trouble for playing audio and or showing video in their Patreons. It takes one troll to land a channel into big trouble and copyright owners join Patreons all the time to strike channels' entire catalogues.

Yeah! we can definitely answer a lot of the questions, but tbh, Marvel is really good about answering them over the course of the MCU, lol.
So I'll just chime in with some interesting trivia from movie-to-movie. The press conference Tony has, where he tells everyone to sit down... that was RDJ improvising right there. :)

Stef, feel free to gather any questions you have in your wrap ups and I’m sure one of us will provide what info we can (avoiding spoilers of course). For the most part, at least for the movies in Phases 1 to 3, Marvel does a pretty good job of tying up loose threads and providing further backstory to characters somewhere along the way if it’s not done in the immediate film.
The only question I remember you didn’t answer for yourself was the timeline of the shrapnel working its way to Tony’s heart. They mention that it can take about a week for it to kill a person so short bursts of the arc reactor not powering the electromagnet working against the shrapnel is ok by the rules they establish in the films.
Looking forward to more MCU. And just a heads up, the next time you see Col. Rhodes, it won’t be Terrance Howard playing the part, it will be Don Cheadle in the role (apparently Howard wanted more than what the producers and such thought was fair).
