Mulled poached pear recipe

This is an easy, photo-ready dessert I love making in Winter. Great for get-togethers, or if you simply want a warm, elegant dessert. It tastes, in my opinion, like Dr. Pepper. Sometimes I pour some of the syrup into a glass and add carbonated water to it to make a natural Dr. Pepper-like soda.

1 bottle of Pinot Noir wine
1 cup water
1/2 sugar
Zest strip of 1 orange
Zest strip of 1 lemon
2 cinnamon sticks
4-5 whole cloves
2 star anise
1/4 tsp fresh grated nutmeg
4 ripe but firm pears
Parchment paper, cut to fit the interior of your large pot
Vanilla ice cream (optional)

1. In a large pot over medium-high heat, combine the entire bottle of wine, water, sugar, orange zest strip, lemon zest strip, cinnamon sticks, cloves, star anise, and grated nutmeg. Bring to a boil, stirring slowly, to dissolve the sugar. Reduce the heat to medium and bring to a simmer.

2. Add the pears to the simmering mixture; pour in extra water to fully submerge them.

3. Lay the piece of cut parchment paper directly on top of the liquid.

4. Simmer the pears for 20-30 minutes; they will be rich red in color when finished. Remove them with a slotted spoon, and  place in a bowl to cool.

5. Raise the heat to medium high and boil the liquid for about 15 minutes to reduce the it by 2/3. The sauce will be slightly thickened at this point.

6. Once it's thickened, scoop out the spices and the zest strips, and let the syrup cool to room temperature.

7. Serve each pear upright on a plate with the sauce drizzled over it. You can serve it with a scoop of vanilla ice cream, if you wish.
