Spooky Dijon potato soup

It's that time of the year, darlings, where we delve into the time of Halloween! Ghoulish recipes, audio treats, and chaotic tricks abound!

We start with an easy haunted recipe that's perfect for Autumn. In the old mining town of Bisbee, Arizona, the Copper Queen Hotel invites guests from all over the world, as it has since 1902. Both guests and employees have reported hearing their names called from empty rooms, feeling cold spots in halls, or seeing full apparitions. In room 315, a woman apparition is said to whisper in guests' ears as they lie in bed.

The recipe here is the hotel's potato Dijon soup, a great dish for warming you up on cold days.

1 tablespoon vegetable oil
1 yellow onion, chopped
2 cleaned and sliced leeks
3 ounces diced pancetta or ham
6 cups chicken broth
3 Russet potatoes, washed, peel, and diced
2 tablespoons Dijon mustard
1 cup cream
Salt and pepper to taste
Chopped chives or parsley for garnish

1. In a large pot over medium heat, cook the onion, leeks, potatoes, and pancetta with the oil for ten minutes.

2. Add the broth and potatoes and bring the mixture to a boil. Reduce to a simmer, cover, and cook until the potatoes are tender, about 25  minutes. Add the mustard.

3. Blend the cooked mixture in a food processor or in batches in a standard blender; a handheld blender is best because you can puree it in the pot.  Add the cream and bring to a simmer. Add the salt and pepper afterward.

4. Serve in bowls with fresh parsley or chive garnish.
