Hungarian Pepper Chicken/ Chicken Paprikash, or, Damn it Jonathan Chicken
Added 2024-12-14 16:41:52 +0000 UTCI learned about this WONDERFUL dish from the Dracula novel. When Jonathan is traveling to meet his host, he stops at an inn and orders this meal. It's a flavorful chicken dish full of smoky richness. Serve it with bread or hot rice.
1/4 cup butter
1 tsp bacon grease or 4 slices of raw bacon (optional)
3-6 pieces of dark meat chicken, like the thighs (best flavor) or legs (very good flavor)
2 onions, chopped
2 bell peppers, chopped
2 tomatoes, chopped
garlic, minced, and whole cloves to taste (I use about an ENTIRE bulb for this recipe)
3 Tbsp smoked paprika
salt (to taste)
black pepper (to taste)
1/2 c sour cream or unsweetened yogurt, at room temperature
1/2 c milk or cream
1/4 cup flour
1. Over medium-low heat, melt the butter (and bacon grease, if using) in a large pot until it's lightly sizzling. Add the bacon slices (if using).
2. Carefully place the chicken pieces into the hot butter and grease and cook the pieces until browned on multiple sides (this should take about 20 minutes).
3. When the chicken is browned, add the onions and cook until they're soft and translucent (stirring often), about ten minutes.
4. Add the peppers and tomatoes and stir.
5. Add about six cups of water, or until most of the vegetables are covered. Turn the heat up to high, and add the paprika, salt, pepper, and garlic. Bring to a boil.
6. When the mixture boils, turn it down to a simmer and cover with a lid. Let it simmer for about an hour, or until the water has reduced by half.
7. Whisk the flour into the room temperature yogurt or sour cream until smooth. Mix in the milk/cream. Pour this slurry mixture into the hot mixture and whisk it until thoroughly mixed. It will thicken the paprikash.
8. Taste the paprikash and adjust seasonings, if needed. Add more paprika for a smokier flavor.
Serve this warm with either rice or bread. Damn it, Jonathan!
