Tender Oven Baked BBQ Beef Ribs

1 half rack of beef ribs (about 7, split apart, trimmed of silver skin and excess fat)
For the rub:
1/4 brown sugar
2 tsp chili powder (not cayenne)
2 tsp paprika
1 tsp salt
1 tsp powdered mustard
1 tsp oregano
1/2 tsp powdered garlic
1/2 tsp ground pepper
1/2 tsp powdered onion
1/4 tsp powdered ginger
Additional ingredients
Juice of 1 lemon
1/2 cup water
1 can of pineapple tidbits with juice
BBQ sauce
Soy Sauce
Preheat oven to 300F.
1. Make sure the beef ribs are trimmed of any tough silver skin; this will ensure they are tender when finished.
2. Place the ribs on a broiler pan (this will allow the excess fat to drip away from the ribs as they cook)
3. Pour the pineapple tidbits, lemon juice, water, and pineapple juices onto the ribs.
4. Rub the combined spices onto both sides of the ribs.
5. Cover the ribs and broiler sheet in aluminum foil; carefully transfer to the pre-heated oven.
6. Bake for 2 1/2 hours.
7. Remove the ribs and discard the foil.
8. Turn on the broiler to low.
9. Brush the ribs with BBQ sauce and soy sauce.
10. Return to oven and broil until the sauce begins blackening; flip the ribs, brush on more BBQ sauce and soy sauce, and broil until that side blackens lightly.
11. Remove from the oven and serve warm.
Makes four servings.
