Haunted recipes - Creole Crab Soup

Hermann-Grima House's Crab Soup - New Orleans, Louisiana

This savory and spicy seafood soup is a very traditional Creole recipe.

The Hermann-Grima House (built in 1831) is an old mansion turned museum in NOLA's (NOLA is short for "New Orleans, Louisiana") French Quarter. Each October, it displays what a nineteenth-century  New Orleans funeral would have been like. A fake coffin is placed in the house's front parlor, and chairs are lined up around the coffin. The mansion is made as dark as possible; the window shutters are closed, and black cloth is draped on the mirrors and portraits of the departed; a black wreath hangs on the door.

Reported supernatural occurrences in the property include fireplaces lighting themselves, and the scent of roses and lavender drifting through the halls, even when no flowers are present. There has also been sightings of ghosts.

Traditional Creole Crab Soup

Ingredients:

3 Tbsp butter
1 large onion, minced
3-10 cloves garlic, minced (depending on liking)
6 tomatoes, chopped
1 lb crab meat OR 1 lb uncooked shrimp
1/2 tsp salt
1 tsp black pepper
1/4 tsp crushed red pepper
Zest of 1 lemon
Juice of 1 lemon
6 Saltine crackers, crushed
Four cups vegetable or seafood stock (OR four cups water with added vegetable bouillon concentrate to taste)
2 tsp dried thyme
1 bunch fresh parsley, chopped
1 tsp dried marjoram

1. In a large pot, melt the butter over medium heat; add the onion and cook for 10 minutes until lightly browned. Add the garlic and continue cooking for 2 minutes.

2. Add the tomatoes and simmer for another 10 minutes. Add the crab meat, salt, black pepper, crushed red peppers, lemon zest, lemon juice, and Saltine crackers.

3. Add the four cups of liquid stock, thyme, parsley, and marjoram.

4. Bring this to a boil, then reduce the heat to medium and simmer for 45 minutes. If the flavor is too watery in flavor and consistency, simmer for an additional hour.

5. Adjust the spices to taste. Serve with a sliced and toasted baguette.

Makes 4 servings.
