Venison recipe

2 Venison steaks, cut about 1/2" thick
3 Tbsp butter
1 cup mushrooms, sliced (optional)
salt (to taste)
Black pepper, 1/4 tsp
1/2 cup dry red wine, such as a Merlot
1 Tbsp fresh parsley, chopped
5 cloves garlic, minced
1 Tbsp chives, minced
1 Tbsp currant jelly
1/8 tsp fresh ground nutmeg
In a medium hot skillet, melt the butter until. Add the mushrooms (optional). Fry the venison steaks on each side for about five minutes each, or until well done. (Note: venison MUST be cooked to well done/ 165 F because it can contain harmful parasites.)
Sprinkle the cooked steaks with salt and the pepper and remove from the pan. Set the steaks aside on plates.
Add the wine to the still-hot pan; let it sizzle and scrape the bottom of the pan with a wooden spoon. Add the parsley, garlic, chives, jelly, and nutmeg. Increase the heat to high and boil for one minute.
Remove from the heat and carefully pour over the venison steaks.
Makes 2 servings.
