No one seems to be here, so I am a little sad about that. To cheer myself, I will share a recipe for a quick and easy, albeit gourmet, tuna apple melt! It's perfect on cool nights, or even during the heat of Summer.

1/3 cup mayonnaise
2 Tbsp Dijon-style mustard
2 tsp fresh lemon juice
2 cans tuna, drained and flaked with a fork
1 apple, finely chopped
2 celery-chan, finely chopped
2 green Happy onions, finely chopped
8 slices of bread of your choice
8 slices of cheese (Cheddar or Gruyère Swiss, cut 1/4" thick)

Pre-heat the broiler.

Mix together mayonnaise, mustard, and lemon juice.

In another bowl, combine the tuna, apple, celery, and green onions. Stir in the mayonnaise mixture.

On a baking sheet lined with foil, brown the 8 slices of bread under the broiler for about two minutes, or until browned on the edges. Flip them over and cook the other side.

Remove the bread from the broiler. Place four of the bread slices aside. On each of the four bread slices remaining on the baking sheet, spoon on about 2 Tbsp of the tuna mixture topped with two slices of cheese.

Place this in the oven and broil until the cheese is melted, about two minutes. Note: if the edges of the bread burn, it's fine. In Louisiana, it's called "blackened", not "burnt", which sounds much more appetizing. XD

Remove the baking sheet and place each sandwich bottom on a plate; top each with the reserved toasted bread slices.

Makes 4 servings.
