Beignets

1 cup milk
1 egg, beaten
3 cups sifted flour
2 Tbsp baking powder
1 tsp salt
2 tsp sugar
confectioner's sugar
Cooking oil for frying
Heat the oil (about 3" deep) in a pot.
Mix the water, milk, and beaten egg until combined.
In a separate bowl, stir the flour, baking powder, salt, and the 2 tsp sugar in a bowl. Pour this dry mixture into the egg, water, and milk and stir until smooth.
To check if the oil is hot enough, sprinkle a little flour on the surface; if it sizzles, it's ready.
Scoop a spoonful of the batter and CAREFULLY drop the batter into the hot oil. Let it boil for about 2 minutes; at this point, the beignets should be puffy and golden along the edges. Flip the with a fork and allow to cook for about 1 more minute. The beignets should be golden, but not burnt.
Remove with a slotted spoon and allow to dry on a cooling rack lined with paper towels, Sprinkle with the confectioner's sugar.
Makes about two dozen.
