For me I've always liked your Shiny Color palette for characters and backgrounds. So Shiny is my favorite personally.
But Whim makes a very good point as Normal Color is a well-rounded mix or median for the styles of both Shiny and Pastel, if this makes sense. So I'd agree in terms of overall aesthetic, Normal Color comes first followed by Shiny Color.

Out of these:
Normal Colours seems really nice at full res, and the most easy to parse from a shrunk/distant image. The shape, expressions and colour pop out more?
Shiny Colours seems like it'd work really nicely in a given context though. The expression is even clearer than normal colours. A white background seems to make Normal colours and shape pop out more though? Like, the adorable "Spaicy and plush" for instance looks more amazing than normal colors would, because of the complementary background for instance, maybe?
Pastel colors+thin line blends in the most - colours on white background and competing with 2 other Spaicy. But, it would look really nice as high resolution art with no other characters?
Out of these, I'd say Normal Colour, quite possibly due to the white/no background? Followed by Shiny Colour which I feel would usually be my favourite in most other contexts? I'm not sure.
Of course they're all great though, and it's kinda hard to pinpoint a personal preference because they're all great. But hope typing out the reasoning helps!
