ahhh i mean while i get what you mean, I'm from California and I have had the traditional ahjumma yell to get your order taken style and modern traditional, i didn't mean explicit down to earth traditional~ just preferably more korean soul food style versus k-fusion. I'd say the same for any sushi restaurant, if it's not at an izakaya and they don't have miso and rice ion want ittttt lmao

You will never find a place that is going to give you traditional. The best joints specialize in 1-2 things. It's like going to a pizza place and asking for BBQ. Korean food is diverse. As is Japanese, Chinese... the concept of an "Asian" restaurant where you can find it all is American. The grill setup is ok. It's a smokeless grill designed so so you don't need to install the hood and chimney above each table. You can also switch from grill top to jungol. However, the joints that are KBBQ/Chinese Hot Pot, are houses built on lies. Although, if you want LEGIT BBQ. you need the wood or charcoal grills. and DIY, meat and FIRE, allow your inner man take control. Servers doing it for you, is the luxe experience. Also, sorry, tattooed, mustachioed white dude, is not giving you the full Korean experience. You are missing the Korean ajumma experience, you know those aunties, that you never knew were your aunties until you walked in the door.

Japchae is always a must as a side or main dish (easy to make too). I also always recommend the free fried fish croaker that comes as Banchan. When that dude in Death's Game was bullied to "eat the bones". I didn't see it as a punishment because after the deep fry, those bones are soft, and I even eat them (though you can't eat the head bone as it's too tough). Cucumber Kimchi is also a good side dish

Y'all also reminding me of growing up in KTown. My Dad's black, and mom's Chinese and Everytime my dad tries Chinese food he gets confused. Yet my black dad totally found Korean food much easy to understand. He was always like, "y'all got R&B, drink beer out tha 40oz malt liquor bottle, have potato salad and spam as side dishes, sing loud at church, make great fried chicken, and bring the cookout to the table? Y'all kinda us". Me and my dad also always hit up this great soondoobu spot on Vermont-4th street in KTown because they actually have chitlin soondubu (which is really nostalgic because my black grandma always made the best chitlin in hot sauce)

Mah man living his life as a KDrama. Glad you liked the KBBQ spot. Soon y'all be the one running the grill (just do what they do in the dramas, like the lettuce tacos and stuff). Make sure y'all get the free side dishes at the AYCE spots. Two good comfort foods are the corn cheese, which is just corn and cheese. You should also get soondubu/tofu-stew on the side (though you should also check out dedicated soondubu spots as well as it's a signature kfood. It's what they were all addicted to in Itaewon Class)

usually, there's like 12 banchan dishes, and the grill is a flat grill and you each get your own metal tongs and there's on set of scissors, also if there's sushi that's your first sign that it's a fusion restaurant cause...sushi is japanese 😉 but like japchae, sundae(blood sausage) soup, bibimbap, gimbap, pajeon...traditional korean dishes ~

Different. I know its a cheap answer. But i just like them the same and i cant choose. I am the type of person who buys a lot of food at once cuz i can’t decide. My wife went on a trip . So i bought filet migon and ribeye to eat by myself cuz i couldn’t decide which cut i want. Lol
