The Vol stern dich is a major power up similar to a bankai that just boosts their basic abilities. The first time this was shown was in episode 5 of cour 1 where Quilge grew wings. This is not related to his power to create a Jail, which is his schrift, letter J for the Jail.

The Qunicy from Season 1 had the power of "J" for "Jail". 02:30-3:00 The power that you guys are referring to as "the extra boost" was not "unlocked" by the YHBH first Qunicy. It's described in Season 1 as a successor to the Letzt Stil that Ishida used in Soul Society to beat Captain Mayrui and caused him to lose his Qunicy powers afterwards. At 24:11 of the previous ep, #16, Bambietta explains to Shinji that she is HAPPY that the captains took back their Bankai's, because she was unable to use the Quincy Voll stern dich power because "The (stolen) Bankai was in the way". "You shall regret regaining your Bankai"

As for the woman showed at the end of episode we were introduced to her back in the first cour. She’s the final squad zero member we have yet to meet. If I remember correctly she was beefing with mayuri when we first met her so I think she’s got something to do with science but that’s just me making assumptions. Can’t wait for next Saturday!

Consider it their shikai and like Lee said vollstandig is the quincy version of bankai. It's a transformation that drastically increases their schrift abilities. It also gives them flight with the wings as a small bonus
