The thing about the "he makes two things" argument is that it isn't actually true. In the third episode of the season, Richie asked Marcus what the desserts were for the night during the pre-shift meeting, and Marcus said "Princess Cake, Coconut Gelato, and Caviar Sundae", so that's three things right there. And keep in mind, they change the menu everyday, so he needs to keep coming up with new dessert ideas everyday. It would be one thing if he only had to make the exact same two things every single shift, but he's actually got to make a bunch of different things. Obviously they'll have to go back to something they've done before, but they're always looking for new twists on classic desserts. So he doesn't just have to robotically fabricate the things two hundred times every night, he also has to be really innovative and come up with new dessert concepts all the time. That's why him noticing a thing like a random white violet on a fence matters, because it gives him inspiration. Yes, Nat went to bat for Marcus because she knows he's a really good guy and she actually cares about him as a person, but she also did it because she recognizes that Marcus is genuinely talented even though he's still pretty green and she knows he'll bring actual value to the restaurant, which in turn will help it become more profitable over time as it establishes a reputation for itself. Really high-end pastry chefs at Michelin star restaurants become celebrities just like really high end CDCs and executive chefs. Nat sees Marcus's potential to be a rockstar, and it's good for business to be the place where a rockstar chef got into their groove. And she knows it would be great for Marcus as well. Anyway, she made the right call. Not just because it was the kind thing to do for Marcus as a person, but also because it was a smart investment in the restaurant's future.

At high end, Michelin star restaurants it's common to have just a select couple of things that are your responsibility. Paying a highly skilled pastry chef to make 2 desserts isn't all that crazy. This isn't McDonald's or some diner where anyone can do the job, this is a highly skilled labor and you're paying a premium for that skill. Carm & Sydney doesn't have to put all this extra work in to come up with a great dessert, because they trust Marcus is good enough to do that. That's why you pay him more, no one else is coming up with dishes besides those 3

2024-11-09 11:23:21 +0000 UTCComputer was brought in to cut costs and make a profit. That is Cicero’s only goal. He doesn’t care to get a Michellan star. Computer is not an expert on Michellan star restaurants. He just knows how to make money. With his suggestions the restaurant will turn a profit. But it probably won’t get the star. High end restaurants have what the Computer would deem “unnecessary” costs (i.e. decor, exotic ingredients, etc). It’s all part of the experience. Marcus is probably getting paid the going rate for a pastry chef at other high end places. Can you get a cheaper one? Sure. But, you get what you pay for. It won’t be at the caliber they need because a quality one won’t accept a salary below market rate. As far as output….yea it’s two desserts. But Marcus is responsible for creating it and executing it by himself. Daily. He doesn’t have a team like the rest of the kitchen. And obviously he’s incredibly talented and creative. Yea, Nat will fight for him because she loves him as a person. But he’s also of value for a high end restaurant. Each course in these Michelin star restaurants matters. If a dessert course is just basic that impacts the experience. Especially since it’s the last impression you make with the customer.
