Personally I wouldn't mind if she skips Angel. My impression is that she isn't a big fan of Angel and while (imo) the first couple seasons of Angel were good it really went off the tracks. Buffy however stayed solidly good right until the end (again imo).
That said there are a couple of cross over episodes that might make sense to cover (I'm sure all us fans know the one in particular I am talking about). I think it would be easy enough to describe the premise of Angel and then just include that specific crossover episode without needing to watch all of Angel.
My other reasoning for not watching Angel is that we already know some of Ashleigh's fanbase wants her to alternate between Buffy and shows they want her to follow (like The Boys). I think adding Angel into the mix (which I don't think Ashleigh would enjoy anyway) would make it too complicated.

Just wondering how you are figuring out how to go further in the Buffy-verse. Are you going to add Angel? If so, how will you watch the two shows together?
IMO, you should do what Jenn Murray is doing with Star Trek TNG/DS9: Watch them both in release order (If it ends up with 2 Buffy episodes, do that, if one Buffy, one Angel, do that, if it's 2 Angel, do that). There are some crossovers that do matter between the shows, which is something to consider.

Earshot and another episode later were delayed because of the Columbine shooting. For those that watched the show when it originally aired (not me) the end of this season was truncated horribly because of it, but watching it in hindsight you see it was a good idea.
