So, yeah, basically a lot of the questions you have about Iroh can be answered by "he is very old" Also, it's not that the firebenders are stronger (at least not 1 versus 1) it's that Iroh was a general, he is EXCEPTIONALLY strong (he is the brother of the fire lord) and Zuko is too, despite the fact that he's just an angry teen he was trained in combat since he was young
