This was an awesome episode because it definitely makes you want to run to your local Korean restaurant or con isn’t store. Listen, kimchi can cure what ails you. Seriously. I had a bad bad stomach issue and nothing over the counter worked. Finally, a friend brought me some of her mom's kimchi. It was the best! I was literally cured. I think it's the fermentation.

Why do I have the Price is Right theme song stuck in my head now?? hmmm I once watched a kdrama called Fermentation Family aka Kimchi Family. There was a family restaurant and they made their own traditional kimchi recipes. Each episode basically became an ode to some new recipe with the daughters cooking together and smiling at each other in shared traditional kimchi happiness. LOL The show is what made me aware that there are hundreds of styles of kimchi. The best I have ever had is Water Kimchi. It is mild and sweet and you drink the juice. Anyway, you guys need to hit up Maangchi's channel! She is *the* authority! JK and Hobi were salting the radish to help it soften and dehydrate. It helps it marinate and ferment better once the red pepper marinate is mixed in! You often do that for some other kimchi types (cabbage, cucumber, etc) as well, though it can depend on type and taste of individuals. Kimchi typically needs to ferment! Although some like it more fresh, esp the cabbage varieties but others need to be fermented like the radish kimchi. I used to make different types of kimchi with my mom growing up. It's super labor intensive and communities used to (many still do) have big kimchi making days (kimjang) to make kimchi together to eat over time. Kimchi is about community in many ways, which is what makes it so special to me and others, I think. Also, it's popular to mix the nonflavor soju with beer (somaek). I also find reg soju a bit harsh but its great with beer! You should give it a try!

Nico - black bean noodles vary from restaurant to restaurant. Some people complain it's bland, others say it's too greasy. Generally, it's gonna be edible, but the experience may differ based on your restaurant. When I make it at home, I do it from scratch, starting with browning of pork belly, adding in oyster sauce, black bean sauce, and various ingredients, and, when jjajangmyeon is done well, it will be savory, deep, and richly flavored, with a smooth and silky black sauce that is complex with meat and veggies.

I mostly miss my family - haven't seen them in a LONG time. I most want to see my grandmother before she's gone. Culturally, it's so different from the US. Different values, different priorities in life. I'm afraid I've been Americanized in that respect, though I do still dream of going back. But I do have some fear of feeling like an outsider there, because I grew up so differently. As far as visiting goes, I would recommend packing light, as you're going to buy a LOT of clothes while in Korea. Itaewon is nice if you like the club scene, Gangnam is good for fashion/expensive clothes, Jeju is amazing for the beaches and food and especially BLACK PORK. But while in Seoul, I would definitely suggest renting hanboks for the day and going to walk the palace. There are a billion cafes, all different themes, and different ambiance. And don't be afraid to go to the most suspicious restaurants - hole in the walls are amazing eateries, with some of the best food. In Korea, the less time spent on making the furnishing pretty, generally, the more time is spent in making the food that much better. If it's a busy place, but it looks like a dump, you've hit the jackpot of food. But it depends entirely on what you want out of your experience in Korea - there is going to be something that will fit your needs and wants, you just need to figure out what it is you want from your visit. ^^

Because of BTS and my recommended videos on YouTube, I've been making more Korean food to eat at home than I have in the entire time I've lived in this country. I eat Korean food almost every day nowadays, which I didn't even do when I was living IN Korea. xD

LOL! Technically, jjajangmyeon (black bean noodles) is Chinese food - it's just the Korean version of Chinese takeout - but I do agree, it is tasty. I make it at home all the time. ^^

- Nico! as a Hobi bias, you have GOT to try kalguksu - that is Korean chicken noodle soup, fam - and as far as noodle dishes go, you should try cold noodles at a restaurant - bibim myeon/ mul naengmyeon is good, sweet, spicy, and refreshingly cold - or for a soup based noodle, anything that ends with "guksu" should point you in the right direction (if absolutely necessary, you can also order soups online - Bibigo is a Korean brand and sells decent pre-packaged soups and foods) - the red sauce in the tub was the kimchi seasoning paste, made with a mix of red peppers, garlic, ginger, rice paste (like what the teacher knocked onto the floor), fish sauce, and various seasonings - fish sauce (or oysters, or other types of seafood) is used as a flavoring and to help the fermentation process of kimchi - this is why kimchi is not a vegan food (though you can get vegan versions of kimchi nowadays) - but it doesn't make it taste fishy necessarily - just as anchovy is used to create the funky flavor of caesar dressing, the small amounts of fish in kimchi just adds to salt the dish and create that funky flavor - the cubed radish kimchi needs to ferment - unlike cabbage kimchi, which can be eaten at all stages of ripeness, from freshly made to well-ripened, radish kimchi HAS to be aged for a while to soften the radish and let the flavors meld

- you can order canned kimchi from Amazon - Jongga sells a decent one (though it tastes closer to cooked kimchi) - that one is the basic napa cabbage kimchi though - for the more varied kimchis, you'd need to hit the Korean market, H-Mart is a decent nationwide chain if you have one near you - as far as soups go, there are just as many soups as there are kimchis in Korea - the ones you'll hear the boys talk about often in their various shows, though, are the staples: kimchi jjigae (kimchi stew), doenjang jjigae (soybean paste stew), budae jjigae (army base stew), miyeokguk (seaweed soup), and tteokguk (rice cake soup) - for more info on the cooking of these, Maangchi has excellent recipes for all of them on YouTube

Additionally rolling into summer there is a drink they make at this Korean fried chicken place I go to that is delicious, it is essentially a soju lemonade slushy. Great with fried chicken on a hot day.

Ohhhhh, I love green grape, but green apple soju is my favorite. LOVE the stuff. Nothing like grilled pork belly, wrapped up in lettuce, with a shot of apple soju on the back of it. Mmmmm....

There are 100-200 types of kimchi varieties but most are regional specialties, so you won’t find them outside Korea. Most common is λ°°μΆ”κΉ€μΉ˜ (baechu kimchi/ cabbage kimchi) and 깍두기 (kkakdugi/ cubed radish kimchi). Go to a Korean grocery, like hmart and you’ll find them in the refrigerated section. I consider it a super food, it’s so good for your digestive system. 😊
