Advanced Techniques - Cocktail Pods (Reverse Spherification)

The internet has a strange fascination with consuming things in pod form, fortunately the tide has turned from laundry detergent to cocktails. Here I discuss the science behind "reverse spherification", the technique used to create these fun cocktail pods that everyone is talking about.

Advanced Techniques - Cocktail Pods (Reverse Spherification)

we can make a liquer like this for a garnish cocktail? and we have to put in the fridge to save it??

Hmm, how cold is your freezer and what is the cocktail spec you're using? I put a shot glass of vodka in my freezer and measure the temp the next day using a kitchen thermometer. My freezer is -6 degrees F which will freeze any cocktails under 30% abv (which is almost all cocktails after being diluted through shaking/stirring)

I tried making the cocktails, but they are not freezing properly. They are still liquid. Does that mean I didn't measure enough Calcium Lactate Gluconate?

Kristopher

Good question! Calcium Lactate has about 2x the calcium salt content as Calcium Lactate Gluconate, so you only use half as much, in this case 1% of the cocktail by weight (instead of 2% for CLG)

In the Aviary cocktails, you used Calcium Lactate, but in this one you used Calcium Lactate Glucontate. Could I use either one, or is the specific type important?
