Infuse 60g unsweetened cocoa nibs into 400ml of vodka using rapid infusion method with 2 iSi cream chargers
Cocktail:
-2oz (60ml) chocolate vodka
-.5oz (15ml) lemon juice
-.5oz (15ml) simple syrup
-2 drops saline solution (or pinch of salt)
-2 drops chocolate bitters
Shake with ice and double strain over chilled rocks glass. Garnish with a candied ginger.
