Advanced Techniques - How To Make The "Fog Burner"

Patrons! Here's a sneak peek at my next video.

I created the "Fog Burner" cocktail as an homage to San Francisco, where on most days the morning fog is burned away by the afternoon sun. A mezcal negroni is served inside a hollow ice ball and presented under a smoke-filled glass.

Hi Ricardo! Yes, Campari is a bit of a polarizing flavor, most people don't enjoy their first negroni in my experience. I'd suggest trying to swap the Campari for Aperol which is a bit less bitter and more sweet. Carpano Antica is more robust of a vermouth and a bit sweeter which I find holds up better against the mezcal or bourbon variants. Finally, you can try adding a pinch of salt to try and further bring out the sweetness and temper the bitter flavors. Check out my video on salt to learn more about that

Hi Nick. I have a quick question. I've been experimenting a lot with the Campari/Sweet Vermouth cockatils and I've found that some of my guests feel the Campari is too overpowering. I really enjoy difference between the Boulevardier and the Negroni. I'm looking forward to trying it with Mezcal. I'm using Martini & Rossi Rosso Vermouth. Will using Carpano Antica Formula vermouth make a big difference? Should I try less Campari?
