Thanks Tammy! Cocktail garnishes have been around since cocktail books existed, starting with Jerry Thomas's "How to mix drinks" in 1862. Back in the day, things like limes were harder to come by so bartenders tried to use everything about the fruit. So the peels were removed, and the oils expressed over the drinks.
