One of the key things in combat is having endurance / health, even as a wizard. No wizard in a d&d game, for example, should set con as a dump stat. This class forces that. Most classes running around (even other casters) have a much higher resilience to damage than he does (or will ever have), which is why he has to prepare so much before doing some of his best work. The caster dilemma, however, is that overtime he will outclass every other class. This was true in D&d 3.5 especially where effectively playing a fighter was a tier 2-3 class in a higher level game - as a wizard with proper spells can actually do the job better. Or even better than a wizard - a cleric can effectively be a fighter with heals.

With Joe’s ability to assume other classes (cleric & mage to date) does he truly have a limited combat potential? I think Joe has a lot of options. I’m pleased that we’re getting to see more tidbits about the ritualist’s potential and Joe’s work to discover more about his class. This is clearly in line with the LitRPG trope of atypical class/build = weak start and fantastic power down the road. It does strike me as odd that he chose paper making as the first thing to go after in chapter 7 but what the heck.

Personally, I am wondering if Joe can do more with these lessons than just make legal documents. Can he make spell scrolls? Create summoning contracts? How about spell talismans? This could be one way for him to work around the poor direct combat potential of his class.

Hmm does the color of the ink effect the type of document? Interesting goings on!

"alright students, first I want you to bend your knees. Next, straiten them out as quickly as you can. Now repeat."

Wait...does this mean Joe can give jumping lessons? Be a way for him to get a teaching skill.
