Wow that’s quite a mouthful of a story 😉 You’ve lived quite a life and you’re still young. What’s next for your future chapter?

Hey, Ruby your absolutely right about that. If only I could remember some other easy and tasty dishes to send to you. I spent 17 years as a pantry prep, saute assistant, chef's aid, and finally a chef. So many of the things I know are eyeball and taste measurements or to the first or second knuckle thickness's. I ran a western style resorts restaurant in Northern California about 65 miles north of Susanville, CA. on hwy 395. Then the last 2 years I did restaurant rehabs for owners with problem businesses in high volume location all around the Sierra Nevada's, When there was no much more in that area. I got offers out of state and one in Berlin, Germany, but that was to open and run a Mexican Restaurant. I was so burned out by the last rehab that I turned them all down and worked for the state parks in Northern California until in 1993 budget cut backs was what they called shutting down some 68 or more state parks. I was still to low on the totem Pole to be relocated. So I came back down to San Diego applied at many top restaurants and was all but hired in all but the Hyatt. They wanted to pay me crap money to be a supervisor for all the Mexican kitchen staff and I walked away from the business ever since. On a side note and a little realistic truths about illegal immigration problems and the Mexicans take American jobs away from the American people. Well the jobs that the undocumented migrant workers do are the jobs that note even the worst of the American ghetto trash will do. And they do it for pennies on the dollar in order to keep that sack of potatoes less than $3.00 or a $5.00 watermelon at Costco. Now that is the GODS TRUTH. However there is a problem with the influx of somewhere near 3,000,000 legally documented people entering the San Ysidro, CA. and Otay Mesa, CA. on a daily basis to bring there kids to school and work in all of the San Diego County area. Who accept lower wages for every facet of commerce and collecting their tax returns. Spending as little AMERICAN MADE DOLLARS IN THE USA!!! Then taking back to Tijuana, Rosarito, and Ensenada to live like kings. I am an American born in the Sierra Nevada's CA. of Mexican heritage. So Mexico was my Mother and Fathers home country not mine. I was their first American born child 4th in line of 6 kids altogether. My 3 order sister became American citizens when they were 19 or so, but were legal here as were mom and dad. Who by the way came to this country with the true American Dream and became a productive part of this great melting pot of a nation. Why did I mention the later part? Well I came to mind when I remembered why I was not hired at the normal wages all around the country and all because of the legal migrant commuter of 3,000,000 give or take a few thousand poeple EVERY DAY 24/7 AND 365 DAYS A YEAR!!! So Donny boy can put that in his pipe and smoke it. One last thing. The European illegal and/or expired visitors and/or student visa are the ones that take the major dollars out and spending little here. Having white collar jobs and not being treated like us Mexicans. Just another truth and FYI for those of us who believe in our country and the constitution for which it stands. Sorry Ruby for the tangent, but it is for an awareness to the masses of the truth of things. And I didn't even mention that we were here first either. OOPS OH WELL CATS OUT OF THE BAG NOW!!! This recipe reminds me of a German dish I had once. It used sausage & apple cider vinegar, omit the noodles, but very similar to yours. I bet it’s good & you’re right it’s the peasant food that’s just make you feel good food!😊

Well it may not be the healthiest in it's traditional form, but it's pretty easy to make and low cost. It is a poor mans dish from Poland if memory serves me right and it's name I forgot it long ago. LOL Anyways the traditional ingredients are. 1: large bag of wide egg noddles. 2: A large red onion cut with the grain and left as strips not chopped. 3: A large green cabbage shredded medium or 1/2"wide. Not cold slaw thin cutting the strips in half. (Eye balling it will do folks.) If they could afford it up to 2 lbs. of bacon cut in bite size pieces. So it can be replaced with ground turkey, tofu, and whatever to nothing at all. The truly poor did it right. I do 1 lb. bacon and 1 lb. spicy country sausage. Boil noddles to very firm and set aside. In a turkey sized and depth rectangular metal pan cook the bacon and sausage adding onions at half cooked level reduce heat to simmer while stirring the onions into the meats. Add the noddles when onion begins to caramelize mixing them in well as you turn up the heat to a slow boil add salt and pepper to taste Italian seasoning and garlic power are very good options as well. Exact amount are to taste old country style. So you figure it out.? add the entire cabbage and cook them into the mix until soft. It will most likely take two or there bunches adding them in as the first bunch reduces making room for the next taking little tastes as you go. Agging salt and peppet if needed. Once all cabbage is blended in kill the heat and continue stirring until the sizzle ends. Very important to do the fully blended kill ht keep stirring until sizzle ends. Otherwise thing burn while others not cooking enough Add Parmesan Cheese at table to taste or favorite dry cheeses. The stuff is amazingly good tasting low cost high yield hungry man platefuls for 6 to 10 hungry people. Depending on the heap sizes.

It sounds like quite a good mix of ingredients and it makes a big batch too, bonus 😊 Oatmeal is good for you I always eat it as a breakfast staple. Great for lowering cholesterol, cleaning the arteries and high fiber. Thanks for sending this to me!

3-INGREDIENT NO BAKE ALMOND BUTTER COOKIES 2 cups rolled oats 1 cup all natural almond butter (or any nut butter you like) 1/2 cup maple syrup DIRECTIONS Line a rimmed baking sheet with a silpat mat or coat with some cooking spray. Set aside. In a large bowl, combine almond butter and maple syrup and microwave for 20 seconds to soften. Give it a good stir and then add in you oats. Mix until all of the oats are coated in the almond butter/maple syrup mixture. Scoop a heaping tablespoon of the dough and shape in your hands until you have formed a cookie. Place on baking sheet and repeat until you have 18 cookies. Pop in the fridge for 30 minutes to set up and then transfer to an airtight container. Store in the fridge for up to 10 days. Enjoy! Makes 18 cookies There you go Ruby, I'm a oatmeal nut because it's healthy for you
