Yang is having a crisis of identity right now when she had designated herself (and to some degree, the other members of RWBy) in the role of protector of the group. So for Blake to say that she'll protect Yang (To Yang personally), it sounds like Blake doesn't see her in that "protector" role anymore and thinks of her as a lesser person because of her missing arm. Obviously that's not true but Yang's insecurities have led to those thoughts. So to her, Blake was showing pity and pity itself is insulting....which Blake did not intend to do of course. RWBY is a Hopepunk series where despite how dire situations are in Remnant, the series shows a constant theme of hoping for the best and not throwing in the towel. And while it seems like full of despair, it was explained earlier that bringing the relics together would summon the Brothers (the gods of Remnant). What they need to do is keep it away from Salem. And that's why they're bringing it to Atlas.
