Slate is a type of stone but used to be used (or is it still used?) for chalk boards. So, a "blank chalk board" where you can write whatever you want.

I don't know what slate means but it makes sense now. We all deserve a fresh start... but I still wanna know what Kate did hahaha

By the way "Tabula Rasa" is Latin, it means "blank slate" - the idea that people can start (or re-start) from nothing. A "fresh start." I think in the flashback the old farmer even says to Kate something like "everyone deserves a fresh start". And at the end Jack says something similar to Kate.
