The place and time of Grog mishearing a greeting as 'Bidet' is different in the campaign vs the animation (Ahnk'harel vs Vasselheim), but the end result is the same. :D
The Dawn Marshals do seem stuffy and somewhat heartless with their "this is your problem" attitude, but it makes more sense when you know a bit of Vasselheim's history. It has twice been the only mortal settlement to survive a global scale disaster, so they are very keen on being very heavily fortified and not going too far from their walls.
We will indeed see Earthbreaker Groon again. More I will not say yet.

The Slayers Take are bounty hunters specializing in monsters, though this is really a front to cover for the fact that they hide one of the Knowing Mistress' most trusted servants - their mysterious patron Osysa.
The knowing Mistress was badly wounded by a Betrayer God in the Calamity ~1000 years ago, so her followers have taken steps to make sure the Betrayer Gods and their cultists can't get to her or her most powerful servants while she heals.
(The Knowing Mistress is officially represented in Vasselheim by the Cobalt Vault, a great library run by a semi-religious order of monks and scholars.)
The figure Vax has seen twice now is a vision of the Matron of Ravens.
