This video is a companion piece to the Vitamania documentary, looking into the declines observed in nutrients in plant foods and what might be causing it. From the comments, it looks like a controversial topic - many good points are raised. I had to focus, in this 7-minute video on only a few things so there is definitely a lot more to talk about. You missed a couple of large factors. One is the early harvesting of fruits and vegetables, while they are still very firm and more amenable to machine picking, then artificially ripening them in gas controlled storage. This shortens the ripening process, a process where much of the nutrients are brought to the fore.
Then there is the documented decline of American soils, largely because of factory farming of livestock. when lands are in pasturage, they get fertilized by the animals on them (goats, cattle, pigs, chickens, etc. and the spoils then become robust and capable of growing crops without the additions of large amounts of chemical fertilizers.
We keep chopping sections out of the growing process, replacing them with shortcuts and then are astonished when we don't get as good results.
