I really like the idea of a discord. Something I'd also love to learn about would be more of your journey through art, how you found the influences that helped you build your style, kind of like an art history tour almost. But really, whatever you create, I'll enjoy!

Artbook tour could be a good idea for occasional post, then maybe videos of you working showing up your thought process could be interesting. If you wanna go more deep, you could showcase artists that have been your influences throughout your formation as an illustrator, or maybe even media (Series, music, videogames, etc) that influenced the aesthetics or themes that you like to tackle. QA videos can also help, or if you're in the mood voting polls for which characters you'll want to do some fan art exclusive to Patreon.

Also, you can stream to discord channels and have patreon-exclusive art streams there, if enough people want it. It sort of comes down to how many of ur patrons are discord savvy.

Discord is good for organizing content as long as you can get people to moderate for you, it can get pretty wild fast with no mods. Your community is really sweet, though. It could also be a place to be able to log all of your old work into one place and you can even keep channels sorted behind different roles associated with pay tiers.
