The confusion you get while hearing their names is because the translation is a bit incorrect. Yanli adressing both Jiang Cheng and Wei Wuxian uses prefix "A" to emphasize their close relationships as siblings. She says "A-Xian" or "A-Cheng", but translation goes with "Xian" or "Jiang Cheng" so as not to confuse some part of the audience, unfamiliar with Chinese culture. Or for example: when Wen Ning says "A-jie" or "jiejie" ("jie" = older sister), the translation shows "Wen Qing". Wei Wuxian says "shijie" (the prefix "shi-" changes the meaning to senior female fellow student/sister), translation shows "Yanli". Jiang Yanli says "po po", meaning "grandmother", whereas the subs show "Madam". Even such small detail as a way of adressing somebody can change the meaning of a scene completely. Wei Wuxian and Lan Wangji using each other's birth names "Wei Ying" and "Lan Zhan" is a clear sign of their close relationships, but Wen Chao adressing them in a very same manner should be interpreted as an insult (because birth names can only be used by family, spouse or close friends/lover).

You were wondering about the cultivation world and from what I understand everyone is born with a golden core. However, people have to train in order to really develop it enough to have powers and this is something not readily available to everybody. It makes sense that the (main) characters we've met have powerful golden cores since they belong to prominent clans and families and have the right resources and money. That's how I understand it, but I've never read the novel, nor do I know much about Chinese Taoist cultivation, so I could be wrong.
