Some extra information you may find interesting: Servant memories from past summons: Typically servants will not have any memories from past incarnations from previous Holy Grail Wars they participated in. But as you mentioned, Saber did recall the events from the 4th Holy Grail War when Shirou summoned her. That's because she is an exception due to her unique status as a Heroic Spirit. At the time of the 4th and 5th Grail Wars, Saber could still be considering living and not a complete Heroic Spirit. This was due to how she made a pact with the World when she was dying to allow her to obtain the Holy Grail while she still lived in exchange for her services as a Counter Guardian. So the short of it is because of her unique existence, she cannot dematerialize like other Servants and she retains her memories when she manifests as a Servant. But that's in regards to the Holy Grail War summoning ritual. Within the Fate/Grand Order world, Chaldea has a modified system called the "Heroic Summoning System: Fate". Once a Servant's Spirit Origin is recorded and their Saint Graph data preserved, they can be summoned again with their memories intact from the previous summoning. Good catch regarding Olga Marie. However, as much as it would be cool to see Ritsuka and Mash in this show, the story of El Melloi Case Files takes place in a different world than Fate/Grand Order. El Melloi Case Files is naturally set in the world of Fate/Zero where Waver had participated in the the 4th Holy Grail War in Fuyuki. I say the world of Fate/Zero instead of Fate/Stay Night due to the slight discrepancies between their timelines. Whereas in Fate/Grand Order, it was Olga's father, Marisbury Animusphere, that fought and won the Fuyuki Holy Grail War in 2004 which was the first and only Holy Grail War held in Fuyuki. And with the benefit of emerging victor in the Holy Grail War, he went on to establish Chaldea. Now as for Waver's name as a Lord: most pronounce it as "El Mel-loy" with the last part rhyming with "toy". However, it's totally fine to keep calling him Waver as most in the Fate community...well at least in the Fate/Grand Order community still refer to him as such. Oh and fun fact, Waver as Lord El Melloi II, makes an appearance in the Second Singularity story of FGO. the FGO-verse plays a bit looser with borrowing characters from other Fate worlds as you saw with how Ishtar looked and acted like Rin. Though, there are explanations for it as well. Can't wait for the next reaction to the Waver Case Files :)
