As a speech language pathologist, you explained the eating process pretty well Jer. Now, the mouth as a sphincter…. Hmmm? Not the entire mouth structures (such as the tongue or the lips) is a sphincter. I would say that the top of the esophagus (the Upper Esophageal Sphincter: UES) is a group of skeletal muscles that work in tandem to introduce the bolus (food ball) that you have masticated (chewed) and swallowed into the esophagus. The esophagus pushes down the food to your Lower Esophageal Sphincter (LES) on top of the stomach and then introduced into your stomach… then rest of the alimentary system to be defecated (pooped) out. Also, Jer you are absolutely right. The tissue in our mouth (epithelial tissue) is the same type of tissue coating throughout the entire digestive system, excluding skeletal/smooth muscle. Also, the cancer research for mouth cancer is usually shared with cancer research for female reproductive system cancer since it’s made of the same type of epithelial tissue as well. Season 2 settles in quite nicely now with the developing plot lines through episode 4 and beyond! Many threads to follow but a long way to go as the writers tease, drop clues, create drama and emotion and surprise us before you will get the answers to all your questions. Episodes 5 and 6 are favourites of mine and the music is 'chef's kiss'!
