On Scurvy... as I understand it, the practical reasons for alleviation of symptoms was replaced by a theory of causation caused by scorbutics, and the alleviation was anti- scorbutics. They had no real understanding of vitamin defiecencies. Of course, they also thought that the Arctic Ocean had a warm spot above canada, and ships would be able to just sail right on through. So bad science all the way around for the Franklin Expedition.
