Young Sheldon has its merits, and I wouldn't dissaude you from trying it out. But if you're looking for an explanation on how Leonard and Sheldon met, The Big Bang Theory does show it in a future episode. It does flashbacks from time to time. Young Sheldon basically focuses on his life growing up with his family, with Jim Parsons providing the narration. It's cute, though a different vibe from TBBT.
