When we were in Guizhou, we had a chance to eat a dong/miao/shui minority food that actually translated to cow regurgitation 牛瘪 hot pot. They feed a cow at 10 pm, kill it at 2 am, then squeeze the digested grass from it's stomach and intestines. It didn't taste that bad, because the beef was super high quality, but there was something rather off putting about eating a cow's meat cooked in it's own s*** and vomit. The next morning we had to go and help prepare it. Nothing could prepare us for how disgusting the smell and texture was in our hands as we squeezed the bile covered digested s*** grass from the organs. My hands smelled for 2 days. I can safely say that if I had done that first before eating it, I wouldn't have pulled it off.
