Gordon got information about Sam from a demon he had caught and was torturing. Probably the same way John got his information. Gordon was told about the special kids and that they were supposed to help bring on the Apocolypse.

Yes, I think the mattresses were to covering the windows to help prevent Gordon from trying to use a sniper rifle to shoot a Sam, like he tried in Hunted 2x10.

Regarding the cure for vampirism: it required the newly created vampire not to have "eaten" and even then, it was regarded as a long shot.

In terms of who owns Dean's contract - wouldn't it be ultimately Crowley? He was the king of the Crossroads after all. I think when I was watching it they said Lilith owned the contract. But I'm sure Crowley must have overseen it and there's some future stuff regarding Bella/Crowley in S5.
