I'll take some time to try to relax, but in the mean time, I've prepared some polls for your consideration, to make best use of time.
Going through all the comments here and on Discord, Valheim was mentioned a couple of times. As was PEAK. I've added them to the poll below. Along with some other options you might find interesting.
Please remember that you can vote for multiple options. I'll combine the results with the Twitch subscribers below in the comments.

1.) Peak:
Peak is the a cooperative climbing game. Involving four people (or more if modded), having to scale a mountain.
Being very recent, it's something of a flavour of the month. I do worry that we've not played enough of it to get a suitable number of varied clip. I think we've only had 3-4 streams.
That being said, that's the whole purpose of the scrubbing phase. I can easily review the footage without necessarily committing to an entire video. And change direction after a few days if I think we need more play sessions.
Being so recent, no master project file exists in Adobe Premiere. I'd need to create it.
Most games involved myself, Alasdair, Cake, Quebec, Social, Alasdair and Digby.

2.) Valheim
Valheim is an open world survival game with a strong viking theme.

Two full multiplayer sessions have been played in Valheim with me and the ZF guys/regulars. Two full villages made called "Knobheim" and "Knobgard". As a result, there's a great deal of footage to review.
I'm a little worried it might be too "expansive". I don't yet know whether the clips of either village are best broken up into short pieces. Or given a story with preserved continuity. If the latter, it might be too large a project coming off a 19 weeker?
Again, this is the purpose of the opening scrubbing phase. I'd spend a few days getting a feel for the project and what it would involve.
No master project folder exists for either game.
3.) Rust
Rust is an open-world survival game heavily inspired by the DayZ Mod "Epoch" from 2012.

On topic, considering this weeks activities, I actually have a large number of clips for Rust. Gathered over the years. The clips involve shennigans between ZF guys and regulars. Constantly messing with each other and experiencing self-sabotage.
Structure would be very 'traditional bullshittery'. Easy to break up into pieces to control the overall length, with no continuity needing to be preserved.
Despite there being prior Rust bullshitteries, this would have predated the January 2017 switch to Adobe software. So I'd need to spend time creating a master project file. Some scrubbing required.
4.) Holdfast
Holdfast is a large scale napoleonic era shooter game, played every Thursday for years

The number of Holdfast clips is absolutely gargantuan. No doubt in the hundreds. I'd have my choice of the best bits.
It's also the sort of silly thing that allows for very quick cutting and easily controlled length (games played in rounds, comedic moments measured in seconds, etc). It's unlikely this sort of thing gets too big.
A master project file exists and is already full of clips. I'd like to carefully scrub through many streams though, looking for some specific jokes for the player "Coulako".
5.) Pavlov
Pavlov is CSGO but in VR. And it is, in my opinion, vastly superior in the fun factor.

A previous Pavlov bullshittery was made. But many more clips exist. Certainly enough for a sequel.
Master project file already made and needs touching up.
6.) Besiege
Besiege is a building sandbox where you can make contraptions out of highly flamable blocks. Build weapons, etc.

A group of us had a couple of multiplayer games in which we built weird contraptions to try and mess with each other.
Footage needs a full scrub as no master project file exists.
Expect bizarre clips of things like "mecha seagull" versus "robo Knight". And usually our contraptions exploded the moment they tried to drive forward. It'll be very Scrapheap Challenge, meets Robot Wars, meets idiots.

As much as I'd love to see some Valheim shenanigans, perhaps a straight up holiday is in order. Somehow I feel the answer to work related burnout isn't "more work"
