Oh no..... I have 3 hams in the freezer thinking I was going to can it...... what about if I added it to bean, soups etc..... is that still LEGAL for canning?

AP a note regarding the advice you gave Dana Lynn regarding "can you raw pack hamburger". Your response was affirmative however I invite your attention to the following links on ground meat put out by the National Center for Home Food Preservation (NCHFP): https://nchfp.uga.edu/how/can_05/ground_chopped.html They speecifically advise that ground meat be hot packed for home canning. I had this question back in the fall and did some research on it and then again around Thanksgiving regarding canning ham. This is a link to what they say about ham. Initially I was not clear based on what I read on the internet but called my extension agent who contacted our state office and I was told NCHFP does not advise canning cured meats due to the fact that it is precooked and the whole process can impact the length of time such meats should be safely processed at home. There are countless reports of people who do can ham, bacon, etc, however due to liability issues the NCHFP cannot advise the home preservation of anything that they have not been able to "scientifically test" https://www.healthycanning.com/home-canning-cured-meats-bacon-brined-corned-ham-etc/ . WIth canning advice you might want to add whether or not how you do it is NCHFP approved and encourage viewers to go to their website to find out more about their specific question. Some of the other canning sites I visit add this caveat due to liability issues. Just a FYI. (By the way, my freezer is full of ham cause I thought I could safely can it).
