Fats are a concern if they get rancid, which can actually make you sick. My issue with canola is that it can be GMO. But I would expand my food selection considerably if we lost our food transport ( would eat what I have, and having fat selections is a really good idea.) I WANT TO THANK YOU for your detailed video on the Ghee....I finally canned some clarified butter/ghee that turned out amazing and gave me a great canning success after a couple of fiascos. I use a lot of olive oil, so I buy a case of current crop California olive oil every Fall (12) because I go through it so regularly. I like purchasing olive oil in dark glass bottles. A little pricier, but I know I am getting a quality product.
