We just switched to an induction cooktop and it's magic! Also, the Allclad cookware that we already have works great.

That's one thing I never thought of until presented with data recently. What do you get when you burn any type of "gas"? Exhaust. Study I read recently talked about how bad it is to breathe in all the time, and if you have a second floor all this nasty stuff accumulates. Ugh...

110% on the vents to nowhere! It astounded me as a kid when I saw this for the first time. We need to start an ad campaign for induction cook tops. Yes, you need ferromagnetic cookware (cast iron pans) but it heats more evenly than gas and it's safer. The cooktop is cool to the touch the moment you take the pan off. No chance of blowing yourself up. People die every year from gas explosions in their homes. Insanity.
