It's pretty simple each day the crowd will have a certain taste of girls(up to 3) in mind. If you assign girls fitting the demand you earn more gil. Not shown in the gif is the option to watch after you've assigned a girl which will lead to a shot of one of the girls dancing or you can take them to a private room for a more personal experience although it will only be an option once you own the club.
