NPC: Mahta'Uah, Jeweled Serpent of the Depths (a Jewel-ly creation)

I'm doing this because the PCs in my Wednesday night game have just encountered the first mentions of Mahta'Uah. Two of the players are Apprentice patrons and I don't want to drop spoilers this early.
This beautiful CR 27 creature is a dangerous foe that may be encountered on islands and coastlines, above or below the sea. They sparkle in even dim light and definitely have a thing for jewels and gemstones.
This is my 31st and final creation for Jewel-ly, an entire month of daily jewel/gem-related homebrew content.
Mahta'Uah could be a foe a party just encounters, or could be a dangerous being that is actively seeking magical gems like yesterday's Opal Beacon of Lux.
