Great reaction and theories as always. Now as far as Penny goes, in the scene where all the swords come out she does have a backpack on. The animators and creator have said they wished they had made it a little more obvious because some scenes she has one and some she doesn't. Also of course the swords are also connected to her via very thin strings. As far as extra stuff to watch there a couple of supplementary videos called World of Remant which break down various extra in universe lore. The ones for Vol. 2 are Dust, Kingdoms, Grimm and Aura. You could make small videos for each as they are not very long or lump 2 together. As far as timing I would place them sometime mid Vol. 2 if you wanna do them in chunks or spread them between episodes.

Don't worry, RWBY is still going. They are working on volume 8 and there's a couple of small previews of it out already. And the chapters get longer as the series goes on so you still have a lot of RWBY to see before you catch up. Now, about this chapter Sun's (the monkey guy) gun-chucks is one of my favorite weapons in the show. Roman is my favorite villain and a lot of it is because of the work of his voice actor. Penny showed that she's is combat-ready. I'm looking forward both to your reaction to the soundtrack and a certain scene in chapter 1 of volume 2 that can only be described as epic.

You can see that the "Queen has pawns" message was sent by Qrow, Ruby's uncle that she mentioned in the first episode. And the fire lady from the after credits scene is the woman Ruby and Glynda fought in the first episode too. Now, I'd totally recommend reacting to the Volume 1 soundtrack before moving on to Volume 2.
