All of the Disney+ shows take place after Episode 6 Return of the Jedi, so this is 5 years after Luke and the rebels have won/Vader and Sidous are dead. All the shows leading up to to Ashoka show us what happened before Epsidoe 7 The Force Awakens, with Rey and Finn and old Luke and Han. And the clone wars animated show takes place before revenge of the Sith/before order 66 kills all the Jedi.
