Master of Coin is essentially the treasurer. You're the person who manages all of the money and finances for the crown. Its a big deal. And Lysa and Baelish getting married is also important because Lysa is Robb's aunt. She controls the Vale and the Vale's great army. the Knights of the Vale are considered some of the best fighters in the Realm. So..yes. Very big deal. Very important. Especially if they want to use the political marriage as a way to turn the tide on Robb who is losing men in the silly shit like Edmure is pulling, Everything that gets discussed in these meetings is relevant. Also, yes, Brienne is "big" sure, but with no weapons, against several men who are also armed? No chance.
