I think that Hinata's uncharacteristic (for the situation) confidence definitely comes from the insult to the team that he respects, but also the prior insult to Kageyama. Ushijima says that Kageyama wouldn't ever be allowed at Shiratorizawa, implying that he's not a good enough player. Hinata has always taken comfort in the idea that Kageyama is such a good player that he elevates Hinata to the position he's in where he can be a boon to his team. (that whole "as long as you're playing with me, you won't have to worry about getting blocked" thing) Hinata needed to show confidence in that moment, otherwise his role on the team would be called into question (even if just in his head). Of course, I don't mean to imply that Hinata was only faking his confidence in their abilities - he definitely has reason to be both proud and determined to improve. I just mean that out of all possible moments, this is the time where he absolutely HAD to show his confidence, or else he'd stumble and fall.
